My first cookbook, “Plant-Based Himalaya: Vegan recipes from Nepal” is now available in the bookstores and you can also purchase them online. I really want to thank everyone who supported my work since day 1, especially people from Lexington, Kentucky. You were my inspiration to create this gorgeous book. I am very proud to write, cook, design, photograph, and illustrate the first Vegan and Vegetarian cookbook from Nepal and put it out in the world to enjoy.

In “Plant-Based Himalaya“, I have shared 38 vegan recipes from my home country, Nepal that I have been cooking and eating since I was very young, including mouthwatering tea, grains, dal, curries, greens, sauces, and desserts. In addition to food, I have introduced Nepal along with my personal goals for a plant-based diet: decreasing mass production and consumption of unhealthy processed food in plastic packaging.

The art of healthy cooking is all about loving yourself and spreading that love to those around you. It’s even better when you can cook a delicious meal and also help protect the environment. Cooking is like a meditation when you add focus and include the right ingredients. I strongly believe cooking has healing power. In this book, you will learn to use ancient Ayurvedic spices, hopefully leading to fewer trips to the doctor and more visits to your gardens.
